Jade Dragon embraces traditional medicine with its spring menu, “Nourish & Thrive Feast”
Jade Dragon, the only Cantonese restaurant in Greater China to have been awarded three Michelin stars and three Black Pearl diamonds, presents the spring menu from its “Nourish & Thrive Feast” series. The menu has been created by culinary director Kelvin Au Yeung and Dr Cheong Wing Hing, based on the principles of the Yellow Emperor’s Classic of Internal Medicine, where food is viewed as medicine in harmony with the rhythms of nature.

In spring, sweet flavours take centre stage to nourish the liver and strengthen the spleen. Highlights include:
- “Stir-fried Imperial Bird´s Nest with Fresh Carb Meat and Egg” – to hydrate and invigorate the spleen;
- “Smoked Free-Range Chicken with Green Tea Leaves” – which warms the body and benefits the liver and kidneys;
- “Double-boiled Loach Soup with Artichoke and Sea Conch” – recommended for eliminating dampness and detoxifying.

Throughout the meal, palate cleansers made from spring vegetables are served, including fresh toon and malantou shoots and tender bamboo shoots.

Among the signature dishes, particular mention must be made of the Thai-style roast rice with suckling pig and the Thai ginger soup with red prawns, sole and large clams, a perfect balance between Thai intensity and Portuguese restraint, inspired by the history of Portuguese navigation in the 15th century.
