Jade Dragon embraces traditional medicine with its spring menu, “Nourish & Thrive Feast”

 Jade Dragon, the only Cantonese restaurant in Greater China to have been awarded three Michelin stars and three Black Pearl diamonds, presents the spring menu from its “Nourish & Thrive Feast” series. The menu has been created by culinary director Kelvin Au Yeung and Dr Cheong Wing Hing, based on the principles of the Yellow Emperor’s Classic of Internal Medicine, where food is viewed as medicine in harmony with the rhythms of nature.

In spring, sweet flavours take centre stage to nourish the liver and strengthen the spleen. Highlights include:

  • “Stir-fried Imperial Bird´s Nest with Fresh Carb Meat and Egg” – to hydrate and invigorate the spleen;
  • “Smoked Free-Range Chicken with Green Tea Leaves” – which warms the body and benefits the liver and kidneys;
  • “Double-boiled Loach Soup with Artichoke and Sea Conch” – recommended for eliminating dampness and detoxifying.

GASTRONOMY EXPERIENCE

A flavor dialogue: Thailand and Portugal come together at the table at Grand Lisboa Palace Resort

Some dinners are more than just meals, they are conversations between cultures. This is certainly true of the “Chefs’ Table: A Symphony of Senses” series of events, which will take place at the Grand Lisboa Palace Resort in Macau from 8 to 9 May, fostering an exchange between Eastern and Western cultures.

This gastronomy experience will be divided into two highlights: a four-handed dinner hosted by “Taste Appreciation”, and a pop-up featuring Thai street food organised by “Zhuweiju”, which brings together chef Herlander Fernandes, from the restaurant Mesa, and Thai chef Thitid “Ton” Tassanakajohn, from the restaurant Nusara, which was ranked 5th in Asia´s 50 Best 2026.

Among the signature dishes, particular mention must be made of the Thai-style roast rice with suckling pig and the Thai ginger soup with red prawns, sole and large clams, a perfect balance between Thai intensity and Portuguese restraint, inspired by the history of Portuguese navigation in the 15th century.

What’s more, Chef Ton offers the chance to try Thai boat noodles (Kuay Teow Reua) and the street food brand “TrepNakorn”.
